Korean Sweet Crepe: Ho-tok
Much to the dismay of our Breton friends, Koreans are also crepe specialists! A beloved winter treat, ho-tok is a sweet, satisfying delicacy found throughout the streets of South Korea.
Much to the dismay of our Breton friends, Koreans are also crepe specialists! A beloved winter treat, ho-tok is a sweet, satisfying delicacy found throughout the streets of South Korea.
It's a straightforward recipe, though some ingredients used by street vendors can be tricky to source.
For the dough:
- 200g warm water
- 5g yeast
- 25g oil
- 300g flour
- one tablespoon salt
For the syrup:
- Cane sugar
- cinnamon powder
- a pinch of salt
Mix the warm water with the yeast, oil, 5g sugar and let rest for 5 to 10 minutes.
Mix the flour with one teaspoon of salt.
Combine steps 1 and 2 and cover the dough with a damp towel to prevent it from drying out.
Mix the cane sugar with cinnamon powder and a pinch of salt to taste.
Fold step 4 into the dough (add a little oil so the dough doesn't stick).
For cooking, add enough oil to a skillet and spread the dough over it. (It's best to cover the skillet with a lid once the dough is well spread.)
Cook until the crepe is golden brown.
Ho-tok is best enjoyed piping hot… Bon appétit!
