Ingredients for Chilled Noodle Soup
- 280 grams of dried naengmyeon noodles
- 2 sachets of concentrated broth (liquid or powder) included with the naengmyeon noodle package
- 2 sachets of mustard oil provided with the naengmyeon noodle package
- ½ cucumber
- 1 Korean pear
- ½ teaspoon of salt
- 1½ teaspoons of sugar
- 1 tablespoon of white cider or apple vinegar
- 1 hard-boiled egg
- 2 tablespoons of toasted sesame seeds
- Ice cubes
Preparing Chilled Mul-Naengmyeon Soup
First, we'll prepare the broth.
Preparing the Broth
In a bowl, pour the concentrated broth sachet. Mix it with 4 glasses of water. Place the bowl in the freezer for 4 to 5 hours to chill. If you're short on time, add just 2 glasses of water plus ice cubes and refrigerate.
Preparing the Ingredients
Slice the cucumber into thin strips and place them in a salad bowl. Add ½ teaspoon of sugar and the vinegar. Mix well and set aside.
Next, mix 1 teaspoon of sugar into a cup of water. Peel the pear and slice it in half. Cut one half into thin strips and soak them in the sugar water to prevent browning.
Grate the other half of the pear and squeeze it through cheesecloth to collect all the juice. You should obtain about ½ cup of pear juice.
Remove the broth bowl from the freezer. Add the cucumber and pear juice to the broth and mix well. Return to the freezer.
Preparing the Noodles
Bring a large pot of water to a boil. Add the noodles and stir with a wooden spoon. Cover and cook for 3 to 5 minutes. Feel free to taste them regularly to ensure you don't overcook them.
Once cooked, drain them and rinse under cold water until they're no longer slippery and have cooled completely.
Fill a large bowl with cold water and ice cubes. Add the noodles and rinse them one final time.
Drain the noodles and divide them into 2 large shallow bowls.
Pour the chilled broth into each bowl. Top with cucumber and pear slices.
Pour one sachet of mustard oil into each bowl. Sprinkle with sesame seed powder and add half a hard-boiled egg to each bowl to finish the presentation.
Serve immediately and enjoy!
